Remedies for Toe Fungus

Seems to be quite common here, where the air is so moist, to have foot fungi. I know, because I saw it on the yoga and chi students, not mentioning the guys in town with the yellow, cracking, swollen painful feet. I had it for a time in Montana, but it left while on a fast. A reader asked me to post these recipes she found, so here they are, in her writing:

Recipes of the Day – Foot Fungus

-So, Vick’s Vapo Rub is good because of the mixture of Thymo (Thyme Oil), Camphor and Eucalyptus Oil. This you apply 2x a day for a few weeks, if it’s a mild case, or 5-16 months if extreme.

-You can also mix a 1:2 mixture of white vinegar:water and soak 15 minutes 2x a day for weeks to months, depending on the severity. You MUST wash and dry your feet super thoroughly however if you use the vinegar treatment because any moisture can cause MORE fungus. Also, vinegar can actually burn your skin, so, if it at any time,it  becomes painful, dilute with more water and use the soak every other day. Keeping a clean, BLEACHED OUT basin or bucket is MUCH safer than doing this in your tub or shower, as any foot and or toenail fungus can be extremely contagious.

Tip of the Day – No matter what, if you have toenail fungus, you should not share socks, shoes, or nail polish with anyone else. If you live in close quarters with other people, take 1 Tbsp. Bleach and 1/2 Qt. Water, mix and spray down shower or tub and leave it for at least 15 minutes before rinsing, wiping clean, and allowing anyone else to use it. Bleach all socks between uses so that you don’t give it back to yourself. Get an anti fungal spray for any/all shoes you own and have worn with foot fungus. Pre-spray any shoes you might wear without socks.

 

Most doctors recommend an oral pill for mild to severe fungal infections but for people with liver disease, an aversion to pharmaceuticals, etc. there are a ton of homeopathic remedies.

Joy’s Pickled Turmeric

A combination of two herbal powerhouses, this pickle makes a wonderful condiment that you can add to many common dishes such as scrambled eggs, rice, soups, curry, and many more. 

Recipe of the Day – Turmeric and Ginger Pickle

Ingredients:

1 c chopped fresh turmeric

¼ c chopped fresh ginger

1 clove of garlic, chopped

1-2 fresh green or red chilies

½ c lemon juice

2 T orange juice

2 t apple cider vinegar

1 T evaporated cane juice sugar

½ t sea salt, adjust to taste

¼ c toasted sesame oil, to seal jars

Directions:

  1. Combine turmeric, ginger, and garlic in a food processor fitted with an S-blade and process until small chunks.  Transfer mixture to a large bowl.
  2. Slice chilies into small strips and mix into turmeric mixture by hand.
  3. Add remaining ingredients except oil and mix everything together by hand. Fill into sterilized jars and cover with oil.  Let sit for a week to blend flavors.

Tip of the Day –Will keep refrigerated for several months.

 

Repe Soup with Camote

My camote plants started producing! These are my first sweet potatoes, yum! They are so good, coming out of the dirt. Here’s my Repe Soup with camote..

Recipe of the Day – Repe with Camote

Ingredients:

  • 6 green bananas, peeled and diced (about 4 cups)
  • 2 T. coconut oil
  • 6 garlic cloves, crushed
  • 1 medium sized finely chopped white onion
  • 1 tsp. cumin
  • 6 c. water, can also use the broth or cooking liquid from the peas
  • 1 c. oat milk
  • 4 T. finely chopped cilantro
  • Salt and pepper
  • Directions:
  1. Add the water or broth from the camote, bring to a boil and add the diced green bananas, simmer until the green bananas are soft, about 20-25 minutes.
  2. Add the camote, stir well and cook for 5 minutes. You can blend this for a creamy soup with the oat milk, if you like.

Tip of the Day – Serve with avocado and hot sauce, salsa or Aji! The traditional Ecuadorian recipe uses ½ tsp ground achiote (optional) mozzarrella and feta cheese.

 

Boldo Tea

This is an herb I got in the Otavlo Market – the Boldo leaf, used to treat mostly ailments of the liver, bladder and protate, but also for the gallbladder and gallstones. It’s also fo insomnia, rheumatism, cystitis, gonorrhea, syphilis, colds, constipation, indigestion and earache. It’s been used traditionally to rid the intestines of worms, as a mild sedative and nerve tonic..

Recipe of the Day – Boldo Tea

Ingredients: a couple leaves Boldo.

Directions. Take a couple leaves of Boldo and pour hot, almost boiling water over. Cover and let steep for 20 minutes.  This cup also has a twig of horsetail in it!

Word of the Day – liver – higado

Tip of the Day – What I do, to see if herbs work well together, is to taste the tea of each individually, smell and taste both. If they’re both calm, or of the same feeling, I combine them!

Cherry Green Smoothie

My daughter says, I was watching a documentary about Mae West and one of her lines was “do you believe in love at first sight?” Mae says, “It certainly saves time…”

Recipe of the Day – Cherry Green Smoothie

Ingredients:

2 stalks organic celery, washed and chopped

1 frozen banana, chopped

1 handful cherries (strawberries or other berries)

1 c. tea, water, coconut milk or other seed/nut milk, even oat milk!

Directions: Blend all until creamy with a little water or rejuvelac, if desired.

Word/Phrase of the Day – amor a primera vista – love at first sight

Tip of the Day – Substitute other berries, if you like! Acai, blueberries, etc….

 

Diy Jamaican Jerk Seasoning

I saw C in town with a great new haircut from our neighbor, Phil, who has a new salon up from the JF. On her way back she said, “i bought you a haircut and you have to get it right now!” Which i did ($15) and he washed my air! I feel pretty! 

Recipe of the Day – DIY  Jamaican Jerk Seasoning

Ingredients:

    • 1/2 c. allspice
    • 1/2 c. Panela
    • 6 tsp. Powdered garlic
    • 4 tsp. mild red pepper spice
    • 1 T, ground thyme, (or 2 T. fresh leaves)
    • 2 T. Powdered  onions
    • 1 1/2 tsp. Cinnamon
    • 1/2 tsp. Nutmeg

salt and pepper to taste

    Add 2 T. Bragg’s Amino Acids or Soy Sauce to make a paste,

Directions: Put all of the ingredients into a food processor or a blender and process until smooth.

  • Word of the Day  – corte de pelo – hair cut

    Tip of the Day – put whole allspice berries straight into the food processor or blender, if you like. Store this (if you added Bragg’s) sauce in an airtight container in the refrigerator indefinitely.

Clare’s Midnight Pumpkin Cream Cheese Sandwich

Clare says, “19 min. exactly in a 13″x 9″ glass pan. Parchment paper down, ’cause you’re gonna flip it out and cut it half, then stack the two halves on top of each other. Frost the bottom one. Put the next one on top. Frost that one, then put sprinkles. The easiest cake recipe I’ve ever made in my life.”

I creamed the eggs, sugar and pumpkin together first. Then added 1/2 tsp. vanilla to the cake recipe. Added a dash of cardamom, too.  I used “Apple Pie Spice,” instead of cinnamon, and was out of baking soda, so I used 4 tsp. baking powder instead , (which is 4x weaker than baking soda.) I was out of cinnamon because I’d used it as an anti-fungal to keep fungus gnats (a.k.a. fruit flies) away from my plants. This is all true.”

This is how Adam gets his midnight snacks. It was too hot to cook during the day, so we didn’t turn on the oven ’til 11:30 p.m. It was supposed to be a pumpkin roll, but I realized halfway through I don’t have a pumpkin roll pan.    This is how Adam gets fed.”

Recipe of the Day-Pumpkin Roll

Ingredients:

3 eggs

2/3 c. Pumpkin

1 c. Sugar

1 tsp. Baking soda

1/2 tsp. Cinnamon

Dash cardamom

1/2 tsp. Vanilla

3 c. Flour

Bake this at 375 dgrees for 19 minutes in Montana.

Filling:

3 T. Butter

8 ou. Cream Cheese

3/4 tsp. Vanilla

I c. Sugar

Directions: Line a cake roll pan or other with parchment paper and follow directions abovd.

Word of the Day – Preocupada – worry

Tip of the Day – The batter looks super liquidy. But it’s okay. Don’t worry about it at all.

 

M’s Fried Rice

My sister, M wrote this: “

I was trying to make our favorite and fantastic fried rice recipe without the brown sugar and sesame oil and it turned out good!  Who knew?  I made the sauce in the blender instead of the pan and replaced the brown sugar with grapes and the sesame oil with tahini.  I was so surprised that it was good! Dates would have worked too but I didn’t think of that and my grapes were about to turn bad.

Recipe of the Day – M’s fried Rice

SCRAMBLE 

1/2 onion sliced, carmelized

Tofu block crumbled (regular size container)

1 T. nutritional yeast

1/4 tsp. black pepper 

1/2 tsp. onion powder

1/2 tsp. turmeric

1/2 tsp. garlic powder

2 c. cooked brown rice

1/2 c. peas

1/2 medium carrot small cubes

SAUCE

2 T.  Bragg’s or soy sauce low sodium 

2 T. rice vinegar

2 T. grapes, panela or coconut crystal

1 tsp. smoked paprika 

4 T. water 

2 cloves garlic minced

1 tsp. red chili flakes

1 tsp. sea salt

1 tsp. black pepper

DIRECTIONS: Carmelize onion by sauteing for 15 minutes or so until crystal and sweet. Add tofu scramble. Move to bowl. Heat sauce, peas, carrots. Add rice. Reduce heat. Add scramble. Mix and serve.

How I Harvested My Cacao – DIY Cacao Tea and Nibs

I’m harvesting my first cacao pods! I’ve shelled the dried seeds to use as cacao tea. And the beans to ground for my desserts. The nibs to use in my oatmeal and cookies! It worked very well. No bitterness at all. Beautiful!

Recipe of the day – DIY Harvest Cacao

Ingredients:

3-4 Cacao Pods, slightly soft and dark red

Directions:

Cut the pods in half. You can cut off the ends first, if you like. Scoop out the insides. You can eat the white flesh around each seed, if you like. But you don’t have to! They dry in the dehydrator and taste like candy! Throw the whole mass on the dehydrator sheets and dry at 150 degrees F. for 20 hours. Put in a bag and mash with a mallet. The shells will come off and you put them in a bag for cacao tea. Put the nibs in another bag, and the white shells in a third. The shells are your tea!

Word of the Day – cosecha – harvest

Tip of the Day- You can put them in the sun. It’s just that the bugs come so fast. You can dry them under 105 degrees F, to keep them raw. But going over 150 degrees will make them bitter and burnt.

 

How to Ferment Your Tofu

Well, my friend the  froggy, the one basically lives in my house  – I finally discovered how he was getting in. I watched his legs disappear through these tiny holes in the bathroom sink. Then, if I’m very observant, I can watch his little eyes peak out when he thinks I’m not looking. Here he is peaking out of the bathroom sink holes.

Recipe of the Day – Fermented Tofu

Ingredients:

  • 8 slices fresh firm tofu
  • 1 tsp, chili powder
  • 12 tsp, pepper
  • 12 tsp. fennel
  • 1 T. salt
  • 12 c. rice wine or your choice vinegar
  • Directions:

    1. Press the bean curd  between 2 paper towels and 2 plates for 2 hours. Dry with towels and cut into 9 cubes. Place in covered baking dish or steamer pot in well aired room for 2 to 4 days.  It will have an old yellowish color and have a very strong smell like blue cheese.
    2. Sprinkle seasonings over all.
    3. Put into a clean, wide-mouth jar Pour wine to cover and sprinkle salt mix on top. Cover in keep in refrigerator. IT will be ready to use in a week and will keep indefinitely. It should be soft and creamy.

Word of the Day – bano – bathroom

Tip of the Day – This smells really strong, as strong as blue cheese. Don’t be afraid!  You could also make it without the seasonings if it’s too strong for you. It was most excellent in M’s stir-fry and sauce, in black-eyed peas, with beans or rice.
