Mango Coconut Popsicles – Only Three Ingredients!

So, I came in to town to meet Joy, right? And there she is with a present from my daughter, huh? Clare paypaled her the money and asked her to go get me chocolate for Christmas, and she did! She wanted me to have a present to open  for Chrismas. And I was just about to go buy cacao powder, when there she handed me  the powdered chocolate, gorgeous chocolate syrup and three different chocolate bars!!! Holy cow, that was fun. And my ex- sent the Juice Factory money for smoothies! So of course we broke up the chocolate ginger bar and put it in the smmothi! I am one lucky gal.


Recipe of the Day – 3-Ingredient Mango Coconut Popsicles

Ingredients:

  • 2 c. diced fresh mango
  • 1/2 c. coconut milk
  • The cream of one young coconut

Directions:

  1. Blend the mango and the coconut milk and cream in a blender until smooth. Taste to see if you need any more sweetening.
  2. Pour the mixture into the popsicle or ice cube trays.
  3. Freeze for 35 minutes and gently insert popsicle sticks.
  4. Freeze until solid.

Word of the Day – por supuesto – of course

Tip of the Day – After blending, add a couple drops of stevia or honey, if you’d like it sweeter. Or papaya and a banana, if you want your popsicles creamier!

 

Avo Coco Popsicles


I’m afraid I have EOG – Early Onset Grumpiness. Oscar the Grouch says to revel in it. “Go to it. Find things to complain about. Let it wash over you. Rotten to meet you, too. Now get out of here.”

 

Recipe of the Day – Avo Coco Popsicles

Ingredients:
1 medium large avocado
1 c. coconut milk
1 T. Honey or coconut syrup

Juice of 1/2 lemon
1/4 c. shredded coconut

Directions:
Blend all but the coconut. Pour into little, 5-0z. Cups. Freeze for 30 minutes, then insert the Popsicles sticks. Sprinkle coconut on top of each cup.
Pour into 5 oz. paper cups. Place in freezer until firm, but not frozen. About 30 minutes to 1 hour.
Freeze 3-4 hours until firm.

Word of the Day – have calor – it’s hot

Tip of the Day – Make these when kids are coming over. The adults will eat them, too. It’s the dry season here, so good time to have some cold Popsicles around!

Peach Popsicles

I just gave Tiko the hardest test of all – walking on the leash past his friends behind the gate. And he did the best today! Woohoo! I mean, if they were in front of the gate, he would’ve been awful, well, as puppies are, and not listened to me or stayed with me so he could play with them. But today he stayed by my side and didn’t pull much at all!! Good dog, Tiko!
 Recipe of the Day – 
Ingredients:
3-4 medium peaches, halved and pitted
Juice of 1 lemon
1/4 c. orange juice
1/4 c. . honey, or 3 drops liquid stevia. or to taste
1/4 tsp. vanilla extract, or dash vanilla powder
Directions
1. Coarsely chop peaches in a food processor. Transfer one cup of the chunky peaches to a medium bowl. Add lemon juice, orange juice and honey to taste (depending on the sweetness of the peaches) to the food processor. Puree until smooth. Add to the bowl with the chunky peaches and stir in vanilla.
2. Divide the mixture among twelve 2-ounce or eight 3-ounce freezer-pop molds , small paper cups, or ice cube trays. Freeze until beginning to set, about one hour. Insert frozen-treat sticks and freeze until completely firm, about one hour more.

Fruit Popsicles

I spent the evening planting sunflowers all over the perimeter of the property. I made it half way, planting one seed in-between each flowering tree of the living fence. I felt like I had to do it today, while the ground was soft for planting after the rain. Pray that it rains again so I can do the other half!

Recipe of the Day: All-fruit Popsicles

8 strawberries
1/2 c. raspberries
1/2 peach
1 banana
juice of 1 lime

Directions:

Blend to a thick consistency, with chunks still visible, if desired. and pour into popsicle molds, ice cube tray or dixie cups with popsicle sticks.
Freeze. Hold bottom of each cup under hot water to remove easily. Pull gently on popsicle stick.

Other combinations:
2 1/2 c. mango + 1/4 c. lime juice + 1/4 c. honey
2 1/2 c. watermelon, 1/4 c. lemonade + 1 c. pineapple + few sprigs mint
1 c. grapes, 1 c. apple juice
1 c. nut/seed ygourt + 1/2 c. honey + 1/2 c. cherries (or other berries)
