Dill Pesto

I went swimming, are you proud of me on a grey day? And the pool was filled with beautiful Ecuadorian families who loved the water so much, and didn’t think of their bodies. And their joy just filled that pool. Adults and children alike. They have no compulsion about showing joy on their faces – just like when they eat ice cream!

Recipe of the Day – Dill Pesto

Ingredients::

  • 1 c. fresh dill
  • 12 c. Italian Parsley
  • 2 T. nuts or seeds: sunflower seeds, walnuts, pine, cashews or almonds
  • 2 cloves fermented smashed garlic. (See my recipe by typing in Fermented Roasted Garlic in the search engine on the first page of this blog)
  • 2 T. olive oil
  • 2 T. parmezano (walnut parmesan – (See my recipe by typing in Parmezano in the search engine on the first page of this blog) ) or regular parmesan.

Directions

  1. In a blender or food processor, place the dill, parsley, nuts, and garlic.
  2. Whirl until finely minced.
  3. Add the oil and cheese, and process until blended.
  4. Transfer to a small bowl, cover and chill.

Tip of the Day – Serve with raw flax seed or oat/sesame crackers found on this blog.

Raw Pesto Pasta and Alfredo Pasta Video

With the new dry season, and watering a few hours a days again, my feet are achy at night. I put a cold water bottle in the fridge and roll it under your feet at night! Oh, man, what a relief!

Recipe of the Day – Raw Pesto Pasta and Alfredo Pasta

ingredients:

Pesto:

3/4 c. (Thai) coconut water

2 cloves garlic

juice of 1/2 lemon

1/2 tsp. sea salt

1 c. pine nuts, soaked at least an hour

1 c. chopped basil

2 T. olive oil

For Alfredo, Use these ingredients above, then add –

1/2 tsp. nutmeg

Directions:  Blend until creamy and pour over zucchini pasta.

Dandelion Pesto

A reader/watcher from my youtube channel just asked me for some dandelion recipes. Which is an opportune time, because I’ve just begun actually blowing on the dandelion blooms, like we did as a child, to sprinkle the seeds everywhere. They are so powerful for you! And so easy to grow, a green, ready for your smoothies, immediately and always growing.

Recipe of the Day – Dandelion Pesto

Ingredients:

1-2 cloves garlic

1/4 tsp. prepared mustard

2 c. dandelion greens dandelion greens
1/4 c. Extra Virgin Olive oil
Salt

Directions:
Puree all the ingredients together. You can add nuts or Parmesan,  if desired. I use it as my pizza sauce!

Sesame Lime Pesto

What to do with the beautiful basil Georgia brought from her own garden? Fresh and organic for the potluck? Pesto! 

Recipe of the Day – Sesame Lime Pesto
Ingredients:
2 cloves garlic, chopped or 1/2 tsp. garlic powder
1/2 c. sesame seeds or tahini
1 c. chopped, fresh Basil
Juice of 1 Lime or Lemon (2-3 tablespoons)

¼ c. or sesame Olive oil
¼ c. pineapple clove tea (Find the recipe in the search engine of this blog)
Salt & pepper to taste

Directions: Add garlic & tahini to a food processor and blend well.. Add basil and pulse a few times before adding the  lime or lemon juice. Mix for about 30 seconds. Turn the food processor on and slowly stream in olive oil. Add the tea to make a creamier dip, Add salt and pepper to taste and serve over rice, roasted veggies, toss with zucchini noodles and use as an appetizer dip with veggies!

Tip of the Day – Use fresh basil here quickly as it goes bad fast, as ny picked green. But it sure grows well, wow!

Walnut Pesto

The five sacred Mayan crops are: camote, papas purpuras, uvilla, amaranto y amaranto purpura. But really are they sacred because they kept them alive? They were gowing  all around them and thus was sacred? And then they would use it in thankfulness in their ceremonies!

Recipe of the Day — Walnut Pesto

Ingredients:

2 oz basil leaves
1/3 c. walnuts
1/3 c. olive oil
1 large clove garlic
dash of salt

1 tsp parmezano – 1 T. ground walnuts, 1 tsp. nutritional yeast, salt and pepper, all ground together (Optional)

Directions: Blend it all in a food processor.

Tip of the Day – The sacred crops may not be holy to us, but it is good to remember and be grateful for crops that sustain us.

R’s Biting Sunflower Garlic Pesto

I’m getting brave asking for hot water occasionally, in a cafe, and just hot water. That and mint tea turns the cacao and stevia powder in my thermos to hot chocolate! And it isn’t as dangerous to carry on my bike as the liquid. Sure is a boon to have something hot when the grey and rainy winds pop up in town.
Recipe of the Day – Sunflower Garlic Pesto
Ingredients:

4 c. Fresh basil

6 small garlic cloves

2 T. sunflower seed butter

3 T. olive oil
Juice of 1/2 lemon
1 tsp. salt

Directions:
Place all the ingredients in a food processor and process until it’s a nice smooth pesto. Chill in an airtight container.

Word of the Day – semillas de girasol – sunflower seeds

Tip of the Day -You can sprout the sunflower seeds first, by soaking them in water for a day, then draining the water and letting them dry out and sprout for 1 1/2 days.

Sunflower Garlic Pesto

 I stopped my bike to say hello to one of the first people I met in Vilcabamba, Lorena, herbalist in the market and friend. She gave me copal! As a gift, a small rock of incense you can thrown into the fire, and it smells amazing. A tree resin, it is valued as a energy and crystal cleanser, healing and repelling mosquitoes, like Palo Santos. I will light it tonight!
