Acai Breakfast Bowl

After a dramatic night with our hill burning, my sister sent me money to get something from the Juice Factory. I got this beautiful Acai Bowl, wow! Like berry ice cream on a super hot day.

Recipe of the Day – Acai Breakfast Bowl

Ingredients:

1 c. acai berries

pinch stevia

1/8 c. almond milk

1/4 c. shredded coconut

2 sliced strawberries

1 small slices banana

1/8 c. cacao nibs

Directions.: Blend the acai with stevia or other sweetener and almond milk. Layer the other ingredients as shown above.

M’s Power Bowl with Tahini

Thanks for the “no-wind” situation right now. Sure is peaceful.

Recipe of the Day – Power Bowl with Tahini

INGREDIENTS
3 c.  leafy greens
1/2 c.  shredded carrots
1/4 c. tomatoes, chopped
1/2 c. guacomole
1/2 c.roasted camote, sweet potatoes matchsticks

1 c, hummus

1/2 c. sauteed mushrooms
1/2 c. cooked black beans
1 T. nutritional yeast

Lemon-Tahini Dressing:

1/3 c.. tahini
juice of one lemon
1 T. sesame or olive oil
2-3 T. water, or more as needed to thin
1 clove garlic, minced
Pinch of sea salt

Directions:
Combine all dressing ingredients in a small bowl, and whisk until well-combined.
Place greens in a large bowl. Arrange remaining veggies and toppings on top of the greens. Drizzle with tahini dressing, Top with hummus.

Papaya Rice Bowl

A neighbor asked me how I cut down my papayas which are too hard to reach. I told her I watched some guys do it along the road. Without a ladder, they used a forked stick. It works great. You put it under the apex of the fruit and the stem, and give it a twist, just as you would with your hand. Be prepared to catch it!

Recipe of the Day – Papaya Rice Bowl

1/2 sliced papaya, de-seeded

1 c. cooked brown rice

1 fresh banana

1/2 avocado

1/2 tsp. cinnamon

1/2 tsp. coconut crystals

Directions :Cut the papaya in half and scoop out the seeds. Ladle the brown rice inside, and top with sliced bananas, avocado, and sprinkle with cinnamon and coconut crystals.

Cantaloupe Bowl

Jose, the intuitive one, wanted some work and encouraged me into doing that hole in the wall, which turned out to be a great idea! It only took 4 hours – so $10. Now he says he will gift me with wood from his house to make me two more beds for more guests. Well, I said I couldn’t right now. But he said he would do it now, since he wanted something to do, and I would pay him later. And then today, a family booked the house for all of October! So now I really need those extra beds he’s making! Can you believe it! They paid already, so I can pay him, too! All because he encouraged me into doing that door/hole in the loft. I can’t believe it. This isn’t the first time I’ve trusted his intuition on a business-level, and have it work in both our favors!

Lime YogurtRecipe of the Day – Cantaloupe Bowl

Ingredients:
2 1/2 c. cubed, peeled cantaloupe (from about 1/2 of a 3-pound melon)
1 c. Almond  or Greek yogurt
2 tsp. Coconut syrup or honey

juice of one lemon or lime
1 tsp. grated peeled fresh ginger
1/2 tsp. finely grated lime zest

Directions:

  1. Place all ingredients in a blender and pureé until smooth.
  2. Pour into 2 glasses and serve.
  3. Top with almond or Greek yogurt, chopped fruit and sunflower seeds, cacao nibs, raisins or coconut, granola!

Sunrise Bowl

I saw the face in the Mexico airport. The brown stillness of a Mexican Indian woman, who passed by me in stillness, and had the perfect stillness of a woman at peace. So rare, to see such stillness. I hope I can have a resting face of that some day.

Recipe of the Day – Sunrise Bowl

 

Ingredients:

1/2 c. granola

Smoothie:

Handful blueberries

1 banana, frozen

1 c. apple juice

toppings: chopped nuts, fresh fruit

Directions: Pour the granola in a bowl. Blend the smoothie ingredients and pour on top.

Acai (or other Berry) Bowl

It’s good to step out of your life, if possible, right? Get a new perspective on things? Except I find myself meditating, sleeping, eating, doing yoga and riding my bike in another place. Same things, different country!

 

Recipe of the Day -Berry Bowl

Ingredients:

1 c. fresh or frozen acai puree
1 medium banana
1/2 cup blueberries, strawberries or boysenberries
1 T. honey
1/2 c. granola
2 T. Chia, flax or pomegranate seeds
Small handful coconut flakes
Directions:
Blend the berries with 1/2 the banana, 1/4 cup of the blueberries and the honey in the blender, and pour into a cereal bowl.Slice the remaining 1/2 banana. Arrange the slices, the remaining 1/4 cup blueberries, granola, pomegranate seeds and coconut flakes in neat piles or rows on top of the acai.

 Tip of the Day – I often, more than not, make my green smoothie and pour it over the granola or oats. It’s really good! I’m kind of addicted to it!

Petr’s Chia Fruit Bowl

Petr, my guest from the Czech Republic, makes this for his breakfast. His wife says it’s very unusual for someone from the Czech Republic to have this for breakfast. Most people have bread and honey, jam, eggs, and bread is number one. They now sell tiny bags of chia seeds in the Czech Republic for $11, he says. The next morning they prepared a big bowl of this and set it in front of me when I came out of my room in the morning. Really delicious!

 

Recipe of the Day – Chia Fruit Bowl

Ingredients:

4 T. Chia seeds

1 c. papaya

1 C. pineapple

options: other fruit, bananas, mangoes, apples.

Directions:

Grind the seeds in a coffee grinder, or soak them in a 1/4 c. water. Add to chopped fruit!. Its really delicious and makes you feel good – gives you so much energy for the day!

Sunrise Mango Bowl

I waited until dark today to walk Tiko – 7 p.m. Particularly because I could see the full moon rising over the hill. And every month, just like this, it lights up the entire courtyard like a stage. Even in the middle of the night I am awakened by the light. Tonight we walked and I was surpised to see golden orbs bobbing above my head.A maracuya vine, I hadn’t seen in the light of day, was full of new maracuyas, hanging from a tree just outside my property. That is SO cool! So I went and looked at my own vines, and sure enough, there were several green maracuyas hanging in a row. Yeay! My own passionfruit in less that a year. That is SO cool. And, the mangoes are in season, woohoo! Can life get any better!

 

Recipe of the Day – Sunrise Mango Bowl

Ingredients:

1 c. oats

1/2 c. fruit tea

1 mango, peeled and cut into slice

dash cinnamon

1 Tab. coconut crystals

2 grains salt

sprinkle of coconut, berries or cacao nibs.

Directions:

Soak the oats overnight in 2 c. water (or cook on the stove, per directions.) In the morning, add the hot tea of choice, and the other ingredients. This is my daily morning sunrise meal! But I can also have it at night when I’m looking for, a little sweetness and comfort!

Tip of the Day – Offer these as “pop rocks” to visitors, especially the kids from the States. They are so surprisingly sweet, with a hint of crunch and tanginess, quite like the candy, “Pop Rocks!”

Smoothie Bowl

As we pulled down the road towards town, I asked the cabbie where all the ladies were going. They were walking singularly, in groups of two or three, as well, several hundreds yards apart. “Taking their walk!” he said. Ohhhh, no wonder the people of the neighborhood take to me. I walk!

 

Recipe of the Day – Smoothie Bowl

Ingredients:

For the Smoothie:
  • 1 c. mixed fruit: banana, mango, papaya, e.g.
  • 1/2 c. orange juice
For the Smoothie Bowl:
  • 1 c. granola or soaked oats
  • 3 strawberries (sliced) or other berries
  • ¼ banana sliced
  • 1 T. shredded coconut
  • 1 tsp honey
 Directions:
   Blend the fruit with the juice and pour into a bowl. Spread granola on top and sprinkle with coconut. Drizzle with honey or coconut syrup.

Tarragon Dressing/Masala Bowl

“Can I have some of this long grass for my burro, Dorothy,” asked Jose as he headed toward the compost bin with his machete.  “Of course, take it all,” I said. How often does one hear that!
I’ve been worried because this is the longest we’ve been without rain. I water and water, but now am getting very little to use from the canal, from the mountains. It’s so sad. I hope it rains soon.

Recipe of the Day – Tarragon Dressing/Mixed Masala Bowl

Ingredients:

¼ c. Dijon mustard
¼ water/coconut water
2 T. lime juice
2 T. sweetener – Stevia, honey, maple syrup, coconut syrup
2 T. dried tarragon
½ tsp. garlic powder
½ tsp. sea salt

Instructions:
Blend all ingredients or whisk by hand until well combined. Toss with a beautiful salad or mixed masala bowl.
