This is a great party/guest dish. Easy, rich and a great substitute for dairy.
Recipe of the Day – Asparagus with Raw Cashew Hollandaise
1 bunch asparagus.
1 T. olive oil
Small handful rosemary
1 c. macadamia nuts
1 yellow bell pepper, washed and de-seeded
juice of 1/2 lemon
Directions: Wash, trim, and warm asparagus in the dehydrator at 104 degrees, for 2 hours or more. Drizzleo live oil over asparagus. Sprinkle rosemary over asparagus. Warm for 2 hours or more.
Hollandaise Sauce: Soak macadamia nuts for 4 hours. Wash and remove seeds from the yellow bell pepper. Chop. Blend bell pepper in blender. Add: nuts,lemon with salt. Blend until creamy. Add water if necessary. Pour over vegetables. Sprinkle with black pepper or cayenne. Eat immediately.

Tip of the Day – Add rosemary to whatever you can. It increases the antioxidants! Fresh rosemary has the highest amount of antioxidants.
