Stuffed Peppers with Mock Refried Beans

As I watched Gladys clean the last vestiges of the big house, in preparation for the new guests,  I realized the necessity of me having a housekeeper more often. I just don’t see the dirt she does. Man, this woman is great, a whirlwind and always so cheerful! And she has ten children, and works the huge corner of the Sunday market, where her son with his big smile carries your groceries, and makes to-go lunches for all the neighbor’s. Man.
