No-Bake Peach Cobbler

You think I’m a fearless, courageous woman living on my own in Ecuador, huh? Listen to this letter I wrote to a male friend at midnight:

But he looked like that creature from Harry Potter, or the Hobbit- Gollum, and he/she
was staring at me with those black, beady eyes. in the pitch dark, with no intention of moving.

I’ll bet it was a mom, like you said, since she was growling at Tiko so fiercely and wouldn’t budge.
I wonder what I could do to scare it away next time.
I’m glad I didn’t throw rocks at it, Now that you say it’s safe. Plus I couldn’t dredge up any rock-throwing anger.

 Recipe of the Day – Peach Cobbler

2 c. walnuts
1/2 c. dates
pinch salt
1 T. cinnamon
6-8 peaches,(or any other fruit) sliced.
Directions: Food process until crumbly. Press into pie plate.
For the filling:

3-4 of the peaches with
1/2 c. dates
1 T. psyllium powder
pinch nutmeg
pinch lemon peel
dash cinnamon
Directions: Blend. Stir in rest of the peaches. Pour over crust. Add topping:

1 T. coconut oil
1/4 c. coconut crystals or raw sugar
1/2 tsp. cinnamon

Directions: Dollop over pie.

Chill. Serve with banana ice cream!

  1. Pretty much every animal is afraid of fire – but, say, a road flare is maybe not the best approach in a grass hut (but I would keep a couple of those on hand anyway). I’d suggest one of those 12″ long Bic barbecue lighters – a good way to keep an animal at a distance, or make it go away, without getting close to it. A super-bright flashlight might also be good – which you should have anyway, of course – but the 12″ long Bic lighter might be the cheapest and most effective way…
