Happy Mother’s Day to me! I just got a gift of a massage from one of my daughters, Rachel! Woohoo! She always includes 80 cents more to get a stevia-flavored sparkling water afterwards. How cute is that!
- 1 c. roasted unsalted sunflower seed kernels
- 8 marinated or reconstituted sun-dried tomatoes
- 1 tsp. turmeric
- ½ tsp. ground coriander
- ¼ tsp. caraway seeds
- ¼-1/2 t cayenne (depending on your taste for heat)
- ½ tsp. ground cumin
- 1 garlic clove, minced
- ¼ tsp. salt
- 43 mint leaves
- juice of 1/2 lemon
- 3 T. olive oil
- 2 T. water
- Place all ingredients in a food processor or blender and blend until smooth.

Tip of the Day –You can sprout these sunflower seeds, easily, too, by soaking overnight, then draining and letting them dry on a paper towel until they sprout little tails. That way their nutrients expand exponentially!
