Cumin-Turmeric Sunflower Seed Spread

Happy Mother’s Day to me! I just got a gift of a massage from one of my daughters, Rachel! Woohoo! She always includes 80 cents more to get a stevia-flavored sparkling water afterwards. How cute is that!

Recipe of the Day – Cumin Turmeric Sunflower-Seed Spread

Ingredients:
  • 1 c. roasted unsalted sunflower seed kernels
  • 8 marinated or reconstituted sun-dried tomatoes
  • 1 tsp. turmeric
  • ½ tsp. ground coriander
  • ¼ tsp. caraway seeds
  • ¼-1/2 t cayenne (depending on your taste for heat)
  • ½ tsp. ground cumin
  • 1 garlic clove, minced
  • ¼ tsp. salt
  • 43 mint leaves
  • juice of 1/2 lemon
  • 3 T. olive oil
  • 2 T. water

Directions:

  1. Place all ingredients in a food processor or blender and blend until smooth.

Word of the Day – bondad – kindness

Tip of the Day –You can sprout these sunflower seeds, easily, too, by soaking overnight, then draining and letting them dry on a paper towel until they sprout little tails. That way their nutrients expand exponentially!
