Stuffed Zucchini Boats

The rains, storms  mudslides have contined, this day in Vilcabamba. Here is a message from my friend who lives on the other side of Vilca during the Yamburara mudslides –

We are trapped on our mountain above Mollepamba until…?

“Wowzers! Can i do anything?”
“We have food, food, and more food. The dogs have food. And, if it comes to it, I could walk to town. I hope it doesn’t! Thank you though.”
The locals say it used to be like this, rainy every day, but hasn’t been this much in forty years, some say! Now I am very glad to live where I do. All my neighbors in ths mou tain say they experienced no personal damage, wow.
Recipe of the Day – Stuffed Zucchini Boats

Ingredients:

1 zucchini squash, cut in half length-wise

2 T. almond, pinenut, regular or cashew yogurt (optional)
1 T. flax seed soaked in 3 T. water
1 T. Chopped onion
1 clove garlic, finely chopped
1/2 tsp. basil
1/4 tsp. oregano
1 tsp. Coconut Aminos
1 cup tomatoes
1 T. Parmesano (1 T walnuts, 1/2 tsp. nutritional yeast, ground up with salt and pepper)

Directions: Cut squash in half lengthwise. With small melon baller, start about 1/2 inch from end and scoop out middle of squash, making sure not to take out too much. Mix all together. Fill zucchini boats. Top with parmezano.
