Just got hit by a surprise tornado. It’s passed and I don’t see any damage but I am out of power along with 11,000 others in my area so saving my phone battery. But we are all safe here if you see on the news. Love you all. M

- Recipe of the Day – Raw Lime Pie with Buckwheat Crust
For the crust:
3/4 c. buckwheat groats, soaked and dehydrated (soak 15 minutes, sprout 1 – 1.5 days, washing several times. Dehydrate at 104 degrees for 12 hours.

1/2 c. pitted dates, soaked 40 minutes, with the water
Process in the food processor until mixture forms a ball. Press in to pie plate.For the filling:
1/2 c. dates, soaked 40 minutes, pitted, with the water
1/2 c. coconut water
1/3 c. key lime juice
grated peel of 1/2 lime
dash vanilla powder
1/4 tsp. salt
1 T. soaked flax, or psyllium seedDirections: To make the filling, pit, peel, and scoop out the avocado. Add to the food processor with the rest of the filling ingredients and process for several minutes until smooth, scraping down the sides of the bowl as necessary. If there doesn’t seem to be enough liquid, you can add more lime juice or honey as needed. Spread over the crust and top with fresh limes or coconut. Chill, covered, or freeze until ready to serve. (This is best eaten the day of making, as the avocado mixture will start to discolor on top.
