Recipe of the Day – Quinoa Tabouli

Ingredients:

1 c quinoa
3 c chopped parsley
2 red peppers, chopped
1/2 medium onion, chopped
2 cloves garlic minced
lemon juice
olive oil

Directions:

Soak the quinoa in 2 cups of salted boiling water for about 30 mins. The quinoa will absorb the water. Drain any excess water in a fine mesh colander,Chop up all other ingredients, add to quinoa then throw in peppers, 3 tbsp of olive oil and the juice of a lemon. Salt and pepper to taste.Mix gently,
