Pine Nut Poppers

Thank you, Vilcabamba yogis and yoginis! Thanks for coming to yoga when I changed venues. Thanks for paying the room fee and sweeping the room after. Thanks for paying my groceries. But especially, thanks for the continuing inspiration to do yoga and teach it!

Recipe of the Day – Pine Nut Poppers
Ingredients:
4 peppers: bell, cayenne, serrano or toblano.
1 c. pine nuts or cashews
2 yellow bell peppers, seeded and chopped
juice of 1 lemon
1 tsp. sea salt
1 T. paprika
optional – 1 T. nutritional yeast
Other options – 1 c. basil, 1/2 tsp. chipotle or cayenne, 1 garlic clove

Directions : Wash the peppers and remove the seeds. In a blender, mix together the other ingredients until creamy and fill the peppers.
