There is only one sandal outside the back door. Why does this scene look familiar? There must be a puppy in the house. There is! It’s Inca, Ren’s 6-month old puppy. And as I look outside for my other sandal, now there is only one boot. Dang it! But that’s okay, because Ren found the boot in the little water canal, and the sandal by the yoga platform, whew!
This pie is rich and decadent, the perfect celebration of chocolate in the crust and the filling.
1 c. ground almonds (or mix half with oats for a lighter crust)
1/4 c. honey or coconut nectar
1/4 c. cacao/carob powder
optional – 1 T. coconut oil for a richer crust
Directions: Grind almonds in a food processor until they make a coarse meal. Add sweetener, powder and salt, oil if desired. Press into a pie plate.
1/3 c. cacao/carob powder
1/3 c. yacon
1/3 c. coconut crystals/ raw sugar
1 T. coconut oil
3 T. psyllium seed powder
~ 1/8 c. almond milk. water or coconut water
dash vanilla powder (or vanilla extract)
Directions: Blend all. Pour into crust. Set with 1 c. broken walnuts. Chill.

Tip of the Day – Substitute the chocolate for a raw carob for a lighter pie. Use oats in the crust for a lighter crust!
