Blueberry Banana Pie

Two supermen came to help me today. One friend came and fixed my bike of its clanking noise, and my guest took down the 30-foot banana tree! Yay! Another 200 bananas and a clear, smooth bike ride tomorrow. What a lovely life.

Recipe of the Day – Blueberry Banana Pie

Crust Ingredients:

1 c.  raw nuts (your choic of almonds, walnuts, macadamia nuts, pecans.)

1 c. ground oats
1 c. dates, pitted
1/4 tsp. sea salt

Put the nuts in a food processor, and blend with the S-blade until crumbly. Add the oats, dates and salt, and blend again until the mixture starts to form a ball. Press into your 9-inch pie plate. Freeze for 10-15 minutes,.

Filling Ingredients:

3 c. berries of choice, washed and de-stemmed

3 c. bananas
2 T.fresh lemon juice
1 c. dates, soaked about 10 minutes

Put 2 cups of the fruit, the lemon juice, and the soaked dates (minus the soak water) into a blender, and blend until you have a smooth liquid. Put the remaining 4 cups of fruit into a large bowl, and pour the blended mixture over it. Mix it together and pour over your crust. Eat now or chill for one hour, for the best taste!

Tip of the Day –You can also add some spices like cinnamon or nutmeg. If you like the taste of coconut, try adding some shredded coconut as well.
