Raw Strawberry Banana Crackers

I went to the PasoFino horseshow in Loja this weekend, wow. So beautiful to see the Peruvian horses on their native continent. I had enjoyed riding them in North Amerca, but to see them here, the proud owners, the beautiful tradition of the gaited horses, in the country of their origin, was really something to me.

Recipe of the Day – Strawberry Banana Crackers


3 mashed bananas

2 c. Strawberries, washed and de-stemmed

1 c. Flax seeds

1 T. Coconut oil

4 drops liquid Stevia


Mash the bananas and strawberries by hand or in a food processor. Then add the other ingredients. You can keep the flax whole and stir them in, if you like them that way. Pour the batter onto paper-lined dehydrator sheets and dehdyrate at 105 degrees F. for 24 hours, or until crispy. Really yummy!

Word of the Day – caballo – horse

Tip of the Day – These are so great to have around as snacks. It’s really hard for me not to eat them all if I don’t put some away for later. You can make bigger, bend-able ones for bread, by taking them out of the dehydrator earlier.
