Potato Truffles

If you’re feeling at all foolish today, listen to this. On the Ipad,to copy and paste, you click on the area, and then click again to copy.  i was wondering why each finger couldn’t copy a sentence on the IPAD, so i could hold five messages at once, or ten! (As if its the fingers that were copying the message, omg.) My dad often said, “Don’t even begin to feel foolish until you’ve done four foolish things that day. 

Potato TrufflesRecipe of the Day – Chocolate Potato Truffles

Ingredients:

1 c. cold mashed potatoes (without seasonings)
1 c. dark chocolate bits or cacao nibs
1/2 tsp.  vanilla or pinch vanilla powder
1/2 c. of topping for rolling (lucuma powder, cocao powder, coconut flakes, coconut sugar or finely chopped nuts)

Directions:

Melt the chocolate gently over a double boiler, then stir in the mashed potatoes. Add the vanilla. Stir for several minutes until creamy. Place in freezer for 30 minutes.
Pour your mixture(s) to roll the truffles in, in little bowls and have them ready. Take 1 tablespoon-sized hunks and roll between the palms of your hands. Roll in desired topping, then place on a dis and chill until firm.
