Veggie Green Banana Burgers

A sunny, beautiful day in Shambalabamba. My friend, Mofwoofoo owns the land, and houses people who work and serve beautiful meals. It’s on the side of Vilcabamba opposite to mine, and just an oasis of beauty. Here is a dish they served the other day, just delicious.

plantain pattiesRecipe of the Day – Veggie Green Banana Burger

Ingredients:

6 green plantains

1 qt. water

3 cloves garlic, minced

3 large green onions

1/2 c. Sesame seeds

1 tsp. Coconut oil

Directions:

  1. Soak the bananas/plantains in water for 25 minutes, skin on.
  2. This helps to remove the peel easier… Mash with all the ingredients.
  3. Shape into patties.
  4. Place on an oiled cookie sheet in an oven pre-heated to 400 degrees Fahrenheit .
  5. Bake for 12-15 minutes until golden brown.

Tip of the Day – The green bananas and plantains are so good for you, full of protein and way less sugar. And they taste so good.
