Cantaloupe Bowl

Jose, the intuitive one, wanted some work and encouraged me into doing that hole in the wall, which turned out to be a great idea! It only took 4 hours – so $10. Now he says he will gift me with wood from his house to make me two more beds for more guests. Well, I said I couldn’t right now. But he said he would do it now, since he wanted something to do, and I would pay him later. And then today, a family booked the house for all of October! So now I really need those extra beds he’s making! Can you believe it! They paid already, so I can pay him, too! All because he encouraged me into doing that door/hole in the loft. I can’t believe it. This isn’t the first time I’ve trusted his intuition on a business-level, and have it work in both our favors!

Lime YogurtRecipe of the Day – Cantaloupe Bowl

Ingredients:
2 1/2 c. cubed, peeled cantaloupe (from about 1/2 of a 3-pound melon)
1 c. Almond  or Greek yogurt
2 tsp. Coconut syrup or honey

juice of one lemon or lime
1 tsp. grated peeled fresh ginger
1/2 tsp. finely grated lime zest

Directions:

  1. Place all ingredients in a blender and pureé until smooth.
  2. Pour into 2 glasses and serve.
  3. Top with almond or Greek yogurt, chopped fruit and sunflower seeds, cacao nibs, raisins or coconut, granola!
