Avo and Basil Zucchini Pasta

You know, I’ve been doing raw food for youtube for years and years before I came to Ecuador. I’ve got some videos for Tai Chi, but mostly, like 300 for raw food recipes, that I show you how to make! img_2375editRecipe of the Day – Avo Basil Zucchini Pasta

1 zucchini, spiralized into noodles


1 avocado

juice of  1 lemon

1/4 c. fresh basil basil

salt and pepper to taste

2 garlic cloves, minced


  1. Cut Zucchini into noodle shapes, using a spiralizer, or paring knife
  2. I eat my noodles raw, but you can also boil them for a few minutes to soften them up!
  3. Blend avocado, lemon, basil, salt, pepper and garlic in a food processor or blender until creamy
  4. Pour over zucchini.
  5. Top with tomatoes, sunflowers seeds, nutritional yeast.

Tip of the Day – Without a spiralizer you can shred the zucchini by hand.
