Camote Coconut Patties

My curtains are in, can you believe it? After eight or nine months without. My house looks so soft and flowing now! There is less light, but more safety. I love it.

orange coconut mashed sweet potatoesRecipe of the Day – “Camote” (Sweet Potato) Coconut Patties

Ingredients:

1/2 c. coco flour

2-3 cooked, mashed camotes or sweet potatoes

1/2 c. brown rice

1 T. chia seeds soaked in 3 T. water or 1 egg

veggie salt to taste

1 T. Coconut oil

Directions: Cook the potatoes in boiling water for 40 minutes. Stab with a fork to see if they are soft enough to mash. Let them cool, then peel off the skin. Mash wih a potato masher, then add the other ingredients. Form into patties. Heat the skillet with coconut oil, then add the patties. Cook on medium-high heat for 3-5 minutes on each side.

Tip of the Day – One doesn’t need curtains here, but it sure does feel more safe now that I can leave the house and know people can’t look in.
