Assgh, I’m so happy being in Bozeman again, wowee. I went to work in my daughter’s nursery today, had a great time listening to North American 80s and 90s music, helping her water and care for the plants. So happy.
3/4 c. elderberries
3 c. water
2 T. grated ginger root
1 tsp. cinnamon
½ tsp. cloves
1 c. raw honey
Heat water in a medium saucepan and add elderberries, ginger, cinnamon and cloves Bring to a boil. then cover and simmer for 40- 45 minutes until the liquid has reduced by almost half. Remove from heat and let cool for a few minutes. Mash the berries with a fork or masher.Pour through a strainer into a glass jar or bowl.
Discard the berries, (They have no more sweetness to them) and let the liquid cool to lukewarm. Then add the honey and stir well.
Pour the syrup into a pint-sized mason jar or 16 ounce glass bottle and you’re done! Chill and take daily 5 days out of every week.

Tip of the Day – You can use this medicinally to boost the immune systerm, or as a pancake or waffle syrup! 1 tsp. for kids and 1 Tab. for adults, every 2-3 hours when you have the flu.
