2 c. cooked gluten-free ziti pasta (or brown rice)
2 tsp. olive oil
1/4 c. red wine
2 chopped celery stalks
2 cloves garlic, minced
2 T. chopped basil
2 c. yellow or white corn
4 basil leaves
4 chopped avocaodes
1 c. salsa or aji
Heat the oil in a skillet. Add the celery, garlic and chopped basil with the cardamom and cook gently 3-4 minutes., adding the wine to warm. Add the corn and toss gently to warm. Place the rice or ziti in large mixing bowl. Add the vegetables and mix. Top with the salsa, and then the sliced avocadoes. Adorn with 4 basil leaves.
