This is the airbnb room of my daughter’s. And this is the bed my daughter had for me in Bozeman, with 1000-count sheets. And this is the woman who got to sleep in it.
1 lb. black beans. soaked 12 hours
1 lb. lentils, soaked 12 hours
1 qt. water
1/2 yellow onion
3 green onions, chopped
1/2 red bell, chopped
1/2 green bell, chopped
1 c. tomato puree
1 T. garlic salt
2 T. olive oil
2 c. fresh spinach
juice of one lime
1 avocado, sliced
Directions: Soak the beans and lentils overnight. Or, you can do the quick-soak method by bringing them into a boil in the water, boiling for 3 minutes, then turning them off and letting them sit for an hour. Change the water to reduce gas, then bring to a boil again and boil for one hour. In a hot fry pan, cook the onions and bells in the olive oil until translucent. Add the beans and spinach and and season with lime and garlic salt. And the tomato puree and stir well. Top with avocado.
