Gluten-free Naan

“Are you coming home for vacation, or for good, Dorothy?” Wow, what a question! When booking the trip I never even considered that my family would think I was coming back for good. But, wow, what a nice thing to say! To give me the opening, the thought, the option of always coming back to the U.S. to stay. Sweet! But can you imagine working a 40-hour week again? To work so I could save to save to retire, to live in an area where I can grow my own food, live simply, eat fresh food and drink in fresh air. Oh, I do that already! What would you do if you had all the money in the world to live as you want to. Where would you live?

Recipe of the Day – Naan


1/2 c. Warm almond milk

2 1/2 tsp. Dry active yeast

1/2 T. Coconut sugar, crystals or honey

1/2 c. Almond yogurt (see recipe this blog) or kefir

2 T. Coconut oil

1 1/2 tsp. Salt

4 c. Gluten-free flour. I use a mix of potato, barley and rice right now.


Blend the first 5 ingredients in a blender. Let sit for 4 a bowl, then combine the salt and flour. Add the blender ingredients. Knead by hand, adding more flour if necessary, for 10 minutes. Dough should not be sticky.

Shape into a ball, let sit in a covered bowl for 1 1/2 hours until dough has doubled in size.

Divide the dough into 8 equal balls. You may have to flour your hands to make the dough non-sticky. Flatten each ball out by hand until it is 1/8″ Thick.
