Why do I want a smoothie so bad? Maybe because I have coconut oil and banana on my hair. I mixed it together for a deep-cleansing treatment after these crazy, dry,windy days in Vilcabamba. One week straight of windy days now, wow! So after the mustard green smoothie, what else can I do with mustard greens? Stir-fry!
1/2 c. thinly sliced onions
2 cloves garlic, minced
1 T. olive oil
1 qt. mustard greens, washed and torn into large pieces
1/8 c. chicken broth or vegetable broth
1/2 tsp. salt
1/2 tsp. sesame oil
1 In a large sauté pan, sauté onions in olive oil over medium heat until the onions begin to brown and caramelize, about 5 to 10 minutes. Add the minced garlic and cook a minute more, until fragrant.
2 Add the mustard greens and broth and cook until the mustard greens are just barely wilted. Toss with sesame oil. Season with salt and pepper. Serve ober brown rice or zucchini noodles.
