PB Banana Oat Cookies

When I first came here I was invited to a women’s potluck. I looked curiously at the women in various stages of what they were going through here in Ecuador, happiness, isolation, freedom, constraint, relationship troubles, peace….And I learned, that just because I was in the honeymoon stage of vibrancy here, and just because it’s beautiful and gorgeous and wonderful, doesn’t mean you don’t have to work on your stuff! Here’s some cookies from my sister, to help you feel better.

Recipe of the Day – Banana Oat Cookies

Ingredients:

3 ripe bananas, mashed
2 tsp. vanilla
¾ c. natural chunky peanut butter
3 T. maple syrup or other liquid sweetener
2 1/4 c.  oats
½ c. + 1 tsp. whole wheat flour
1 tsp. baking powder
¼ tsp.salt (optional)
½ cup non-dairy chocolate chips or raisins

*to make gluten free eliminate whole wheat flour and use oat, yucca, quinoa or a mix of gluten-free flours.

Directions:

 

Preheat oven to 350 degrees. Prepare a cookie sheet with parchment paper. Mash the bananas, vanilla, peanut butter and maple syrup into a creamy consistency in a large bowl. Combine oats, flour, baking powder and salt and to the wet ingredients. Stir in the chocolate or raisins, or both! Place rounded, heaping tablespoons onto an ungreased baking sheet . Bake for 15-18 minutes.

Tip of the Day – These are so addicting, you’ll want to make a lot! My sister couldn’t make them fast enough for us. They would be a good travel food if you could keep from eating them!
