Cashew Mayo Sandwiches

I met this man in the Loja airport, the only one at my gate at 4;30 a.m. and he shouted, “Dorothy!”when I walked in. i recognized him as a Vilca local, and we got to talking. He spent two years in the Himalayas, in a cave, learning to meditate, what!!!! Wow. And spent 2 1/2 years with a private yogi, 3x a day, who took all the pain from his spine, where he’d had 3 broken bones, woww!

Recipe of the Day – Cashew Mayo Sandwiches

Workday Plant-Based Meals

8 slices sprouted wheat bread (see previous recipe this blog)

1/4 c. cashew mayonnaise:

1 c. soaked cashews

1/4 c. vegetable broth

juice of one lemon

1 avocado

1 tomato

1 c. mixed greens

optional : tahini, salt and pepper, mango or mango dressing, salt and pepper

Directions:

Soak the cashews for a few hours or overnight. Drain and blend together with the broth and lemon. Toast the bread, if desired, then spread with the mayo. Add sliced avocado, then tomato and greens, adding salt and pepper, mango or salad dressing, if desired.
