Banana Blossom Salad

OMG, my airbnb guest just fixed a crisis where no keyboard would work on my computer, which is dying a slow death. It’s so old they don’t make the parts for it anymore, yada, yada. Now the keyboard went out, but he showed me if I just close out everything and open a new window, it works again, whew!

They’re using the banana blossom to make this soup on the Anthony Bourdain show – at 30 minutes. Perfect. I’ve been looking for this recipe, so that, next time my banana tree produces flowers, I can use some of them for soup or salad!

 

Recipe of the Day – Banana Flower Salad

4 c. mixed greens

1 c. banana flowers

  • 10 large cherry tomatoes, halved
  • 1 c. chopped fresh cilantro
  • 2 green onions, very thinly sliced

1 c. crushed lime leaves

5 T. fresh lime juice

3 T. coconut sugar or panela

4 garlic cloves, minced

1 fresh red Thai chile with seeds, thinly sliced

1/4 c. peanuts

1/2 c. pineapple, optional

Directions: Mix the greens, tomatoes, flowers, onions and cilantro with the green onions, tossing lightly. Blend the lime leaves, juice, sugar, garlic, chiles and pour over salad. Top with peanuts and pineapple, if desired.
