Coconut Avocado Fries

I’m not mopping this huge floor. I’m mopping this one tile, then this tile, in small, circular motions, keeping the mop close in to my body. I learned that from my maestro. Not stretching the mop out and trying furiously to cover more ground. It’s doing one thing at a time, meditation, one tile at a time. It’s not looking ahead, and, by the way, the floor looks amazing.

Recipe of the Day – Coconut Avocado Fries

Ingredients:

  • 1 avocado, peeled and pitted
  • ½ c. gluten-free bread crumbs or ground oats
  • 1/3 c.  coconut flakes
  • sea salt and pepper
  • dipping sauce of choice (See recipe this blog)
 Directions:
    Cut the avocado into thick slices. Set aside. Mix the breadcrumbs, coconut, salt and pepper in a separate bowl. Roll the avocado slices gently in the mix.
Dehydrate at 105 degrees for 4 hours or until desired tenderness, or bake at 375 for 8-10 minutes. Serve with your dipping sauce!
Word of the Day – organico – organic
Tip of the Day – It’s difficult to tell if things are organic here in Vilcabamba. Once the people found that organic products were selling well, many people started yelling, “Organico, organico!”  It may or may not be true, and we do have an “organic” market on Saturdays. But a lot of the food in the Sunday market is organic, as well. In the end, you just have to do what you do everywhere else – get to know the growers, visit their farms, and in the end, trust. And be happy when you eat!
