Sunflower Papaya Muffins

I’m finished on a full-time basis with my workers, but I asked Jose to come over and weed this area for me, the mani which looks so beautiful, but is being overcome by weeds. He reminded me this morning, “Dorothy, when I work in the garden, it’s only $20 a day, not $25 as construction is.” Whoa. I had forgotten, and his honesty again, took me by surprise. I went and picked a papaya and offered one to him, but I guess he has plenty on his land.

We all know of my love affair with papayas and mangoes. And what does a girl do on a slow day home alone? Shell a hundred sunflower seeds and make muffins, from my very own papaya!

Recipe of the Day – Sunflower Muffins

2 mashed bananas

1 c. papaya

1 c. platano flour

1/2 c. apple sauce

1/2 c. sunflower seeds

1 Tab. chia seeds soaked in 3 T. water

pinch salt

1 tsp. cinnamon

Directions: Combine all in a food processor and pour 3/4 full into muffin cups. Dehydrate 105 degrees for 12 hours or more, until desired texture. You can eat these raw, without dehydrating!

Or, bake at 350 degrees F. for 20 minutes.

Tip of the Day – Give, give, without reason. I give my papayas away, and then there they are again, multiplies more than I could imagine!
