Raw Pita Chips

What’s the most famous question in Vilcabamba? “What day is today?” Timeless. That’s how it felt today, singing with a guitarist/singer and a violinist in front of Layseca’s Restaurant. The magic of singing while the street fills with people, the antique street lamps coming on, sitting with friends while they play songs from the 70’s:  Bread, or America, Bob Dylan, Cat Stevens, the Beatles. What could be better?

Recipe of the Day – Pita Chips

Ingredients:

2 c. water
6-8 carrots
1 yellow squash
1/2 c. raisins
1 tsp. honey
1 tsp. cumin
1/8 tsp. turmeric
1/2 tsp. garlic powder
1 T. onion powder
2-3 t. good salt
Dash of soy sauce (Bragg’s Aminos or Nama Shoyu)

1 c. flax or chia seeds soaked in 2 c. water.

Directions: Everything goes in the blender at once, chia seeds last. Blend briefly till mixed well. Using a small spoon, place spoonfuls of batter in rows on paper-lined dehydrator sheets and dehydrate at 104 degrees for about 36 hours until crispy.  Eat with the garlic almond yogurt, guacomole, raw dressing or hummus!! Word of the Day – yogur – yogurt

Tip of the Day – Add 1 avocado to make the recipe more creamy, and a greener cracker! Use aji or chimichurri instead of soy. Yum!
