So I said, “Merry Christmas, Tiko,”and gave him the whole thing. I wasn’t about to chop it up, yikes! Two days later and he’s still chewing on the jawbone. And he reeks! I put baking soda on him and ran it through his hair. Wow. I guess I’ve got to give him a bath. Tomorrow, the river!

Recipe of the Day – Chocolate Coconut Cake / Cokoladovy cheesecake

Crust:

2 c.shredded coconut
2/3 c. pitted dates

2 T. coconut oil

1/2 tsp salt
Mix everything in food processor and form crust on bottom of cake form and put in refrigerator for a while

Filling:

2 c. cashews (I prefer to soak them)
2/3 c. pitted dates or more for sweeter taste
1/2 c. water or more as needed
2/3 c. raw cacao powder
1 T. pure vanilla
1/8 tsp. salt
1/2 c. melted coconut oil

Mix everything in Vitamix or other high speed blender. You may need more water to blend it until very smooth. Let it sit in your fridge for couple hours before serving. You can store it in the freezer.I added cocoa butter to the mixture and the white layer is just coconut cream (solid part of coconut milk can, put in freezer or fridge so it separates) and bananas.
