Berry Chia Pops

I just said goodbye to two workers after ten months with Franklin, one year with Jose. Wow. So weird. It’d be even weirder if I didn’t have so many people/guests on the property! Jose listed the projects yet to be done and that I should call him when I have money. Wow. What a great relief it feels like. Really, really good, confident and blessed, and safe, and wonderful and successful and all can think of is, thank God for my daughter Clare getting me to this point.

Recipe of the Day – Berry Chia Pops

 

Makes 4 medium-sized popsicles

Ingredients:

1 c. fresh blueberries

1/2 banana

1 heaping T. soaked chia seeds

3/4 c. almond or coconut milk

Directions:

Place all the ingredients in a blender or food processor and pulse until just smooth. Pour into popsicle molds or ice cube trays with a popsicle stick and freeze for at least 4 to 5 hours.

Word of the Day- proyectos – projects

Tip of the Day –If you have a hard time prying the popsicles from the mold, fill a large bowl with a few inches of hot water. Submerge the lower half of the popsicle mold in the hot water for just a few seconds and you should be able to slide the popsicles right out.
