Apple Chia Pudding

I received a frantic phone call from one of my guests, who was in the hospital with multiple stomach issues, headache, and her face and right arm was numb. She wanted me to translate, so I called out the window to my worker, who dashed me to the hospital. This young 20-year old was so glad to see me, tears started coming down her face! Ohhhh….Reminding me what it’s like to be in a strange country without family or know-how. Anyway, they thought it was probably parasites, but today we went again, and the test showed negative. She did have a bacterial infection, the doctor said, probably from two weeks ago, when she was in another city. So, antibiotics, rehydration packets, four liters of water per day, and she should feel better soon. The entire visit – both days, free. The interesting part was the numb arm and face, which appears to be from dehydration – not getting enough water, and thus minerals, to your body! Wow. Keep drinking water, everyone!

Recipe of the Day – Apple Chia Pudding

Ingredients:
1/2 C. Almond or Coconut Milk
2 T. Chia Seeds
2 T. Apple Butter
1/8 tsp. Vanilla Extract
Pinch of Ground Cinnamon

Directions: Soak the chia seeds in the milk, then add all ingredients to the blender. Blend, chill, or drink now!

options: Fresh Apple Slices, Apple Butter, or Vanilla Almond Yogurt.
