Sweet Coconut Rice

Yesterday I was paying for my P.O. Box for another year, and looked in my box, and there was a packet of goji berry seeds from China! I never even got an email from them, weird! And the other amazing part is that the seeds got through. They don’t accept seeds from other countries. Miracle!  And I will plant them with the new moon!
 A friend next to me was opening his three packages he received from Ebay, from Japan. He paid very little for shipping, because he says you go to Ebay, press the Ïnternational Shipping button, and if it comes from Japan, you pay free or nominal shipping! What! He paid $1 for Ecuador tax – I watched him! Makes me want to get on Ebay and buy stuff!

Recipe of the Day – Coconut Rice

Ingredients:

Juice from 1 coconut (about 14 ounces)

2 c. water

1 1/4 c. uncooked brown rice

1 tsp. coconut crystals

Pinch salt
Directions:

  1. In a saucepan, combine coconut milk, water, sugar, and salt. Stir until sugar is dissolved. Stir in rice. Bring to a boil over medium heat. Cover, reduce heat, and simmer 40-45 minutes, until rice is tender.

Word/phrase of the Day – sin azucar – without sugar

Tip of the Day – At this altitude, we have to cook things a bit longer. Adding a bit more water and cooking the rice longer makes it perfect. I also soak my brown rice the day before to make it softer.
