Roasted Bananas with Orange,Tamarind and Ginger

Well, the workers seemed to have fixed the drain smell without moving the whole septic field! They filled the drain in the bathroom with water, which pushes down the pressure into the tank and does not let the gas come out, wow! Good one. And they’re also putting extra tubing from the field to both sides of the property, exiting, with permission, across the road, and putting a long, tall pipe up out there from the septic tank up into the air, like the one the little casita has.                                                                                                                                               Whew! Saved me about three thousand dollars! And it worked!

 

Recipe of the Day – Roasted Bananas with Orange and Tamarind

Ingredients:

3 bananas

juice of 1 orange

3 T. mashed tamarind pulp

1 tsp. grated ginger

Directions:

Peel and slice bananas and prick with a fork. Slice in thin lengths and roast on a broiler tray for 10 – 12 minutes. Make a paste of the orange, ginger and tamarind by mashing with a fork, and spread a third over each banana,  ensuring that they are evenly coated. Bake for 10-15 minutes until bananas are soft and sticky. Or you can warm in your dehydrator at 105 degrees for one hour or more, depending on how dry you want them.
