Raw Strawberry Oat Bars

My neighbor, friend, from above on our mountain, during our first torrential rain of the season,  asked, “

C- Dorothy how is it looking down there? The mountains up here have water falls. A lot of water coming down the road. Direct TV is out…LOL
D- Wow. Interesting. I suppose it’s gonna be the same as the one we had last year? Looks like. Interesting light! So far, so good! Thank goodness they just re-dug my canal, whew!
C-Just in time…LOL The water falls up here are pretty ….A lot of water coming down. Hope your septic is sealed enough. …It is so low …Guess you will be finding out….
D-Yeah, keep your fingers crossed! You guys are lucky to have the waterfalls and the beautiful mountain so close
C- It has to be beautiful from your new deck…Good that the rain is coming straight down. It seems to be passing pretty fast though cuz now I can see that big ugly hotel again…LOL We won’t have to water tomorrow!!! Yeah!!
D =Oh yeah, I can always retreat to the new terrace, good one! I love it! It’s still raining in torrent here – no off button! Tiko is running like mad through the canal that runs through the banana trees, acting like he’s been waiting for this all year! I just wish he wouldn’t keep running in the house with his muddy footprints – “Hey, in or out, Tiko, come on!”

Recipe of the Day – Raw Strawberry Oat Bars

 These bars are the perfect mix between a breakfast bar and a decadent brownie . Which means that they are perfect for breakfast, lunch, dinner and dessert. and…there is absolutely nothing to feel guilty about. Nothing.
1 1/2 c.dates (pitted and soaked 10 minutes or more (save the soaking water)
1 1/2 cup almond meal or dried almond pulp
1 c.  strawberries
2 T. rolled oats
Pinch of sea salt
Pinch vanilla powder or extract
1/2 tsp. cinnamon
1/2 c, strawberries ,thinly sliced
1T chia seed, soaked,
1 T. honey or liquid sweetener of choice.Pulse the dates, nuts, oats, and salt in a food processor until combined. Add some of the soaking water, if needed, to make a chewy crust. Press the date mixture into the bottom of a 9 x 5 inch loaf pan. Mash half the strawberries with the honey and chia and spread on top of date mixture. Top with remaining strawberries. Slice into rectangles. Chill.
options: Add coconut to the crust, cacao nibs to the filling, or use raspberries instead of strawberries.
