Papaya Tapioca Pudding

I have this guest in the cottage who wanted a quiet, nature-bound place with good internet. And now I know why – this is so cool. He does backround music with nature, for computer games! Cool job, right? And I’ve never had a quieter guest, as he’s always got his earphones on, listening to the most select and pure of sounds.

 

Recipe of the Day –Papaya Tapioca

Ingredients:

3/4 c. tapioca
Milk from one coconut
2 large papayas, seeded
 
Directions:
  1. Boil a pot of water and stir in the tapioca.Simmer 5-7 minutes, stirring often to keep from sticking. Drain and put in bowl.
  2. Pour the coconut milk into a small saucepan and  bring to a simmer. When it is simmering, stir the tapioca into the coconut milk until the pearls are evenly coated. Remove from heat and cool. Pour puddings in to glasses and top or mix with papaya.

Tip of the Day – Pick your papayas when they just have a little yellow on them. Let them sit on the counter for a day or two. It’s easy to let them get too ripe, so you gotta be careful. They’ll have a lot of green and them and be perfectly ripe and sweet.
