Papaya Granola

Ahhh, finally, a steady, lightly pouring rain, soaking the earth…relief…relief. Feels like, not just a relief for the plants, for the drenched earth, but relieves anxiety we didn’t know we had…feels like relief to the soul. I don’t know exactly why, maybe something primal in it. And not having to water the two hours in the morning and the one in the evening, makes the day feel so nice and long, and like there’s so much time. The rains are so late, wow! The rains have traditionally been from Oct.- Mar. And here it is the middle of January for our first steady rain. Wow.

Recipe of the Day – Papaya Granola

2 bananas, mashed
1/2 large papaya, mashed
1 c. shredded coconut
2 tsp. coconut oil
2 c oats
6 c. puffed brown rice
2 tsp. cinnamon
Pinch of salt
1/4 c. apple sauce
2 tsp. stevia powder
1/4 c. shelled sunflower seeds
1/8 c. orange juice
1/2 tsp. grated orange zest
1/2 c. chopped dried pineapple
1/2 c. chocolate pieces
    • Directions:
    • Dehydrate at 105 degress for 4-24 hours, depending on the crispness you like. OR
    1. Preheat oven to 325 degrees. Lightly grease baking sheet with oil  In a medium bowl, combine all ingredients up to the stevia powder and mix well. Spread the mixture on the greased baking sheet and bake for 15 minutes.

Tip of the Day –Granola is a great travel food! It’s got a world of health and vitality. Carry it with you. Pour tea, juice or nut/seed milk, coconut milk over it. It’s all good! I’m going to bring it on the bus or plane when I travel next.
