Oat Cake with Papaya

Well, one of my guests broke a bowl that held my soaking oats. So she put my soaked oats, with cinnamon and stevia, on a saucer. I saw it the next morning and saw it was now an oat cake! And gosh, I loved the oatcakes when I traveled around Scotland. I know they were probably for the children, but I loved them.  And here is my recipe.

Recipe of the Day – Oat Cake with PapayaIngredients:

  • 4 c. oats
  • 1 c. platano or other gluten-free flour; potato is good
  • 1/2 tsp. baking soda
  • 1/4 c. coconut oil
  • 1 tsp. salt
  • 1/2 tsp. stevia powder
  • 1 c. cinnamon tea
  • 1 T. honey

options: chocolate bits, cacao nibs;

Directions:

  1. Pre-heat the oven or dehydrator.
  2. Mix together the dry ingredients. Add the oil in little shavings until the mixture looks like it has large bread crumbs.
  3. Add your tea bit by bit and combine until you have a somewhat thick dough. The amount of water varies; depending on the oats.
  4. Pack into a loaf shape on your dehyrator or broiler. Dehydrate 105 degrees for 1-4 hours, or bake for appprox. 20-30mins. or until slightly golden brown.
  5. Brush with honey the last few minutes.
