Mint Meltaways

When I heard I had to move the septic tank, I had a meltdown. In the manner of Diane Keaton on “Baby Boom.” I never expected to have this much money on my credit card. But I just skyped with my daughter and her friend, my friend, and they said a series of very true things, starting with, “You need a new perspective, and here it is:”                                                                                                                                     “That’s not even my car payment for a new car. That’s not even a new car! You don’t even need a car – or a car payment, or to scrape the snow off your car!”  

And, “I don’t want to hear it, Dorothy. You live in f§*& paradise. You’re wearing a tanktop. And what are you doing, making chocolate and watching “Sisters?” And don’t even talk about the word student loans.”

Okay, I shut up. And I got a new perspective. I am a strong, confident businesswoman who’s investing money to make money, to have something wonderful to leave my children.

Recipe of the Day – Mint Meltaways

1 c. cacao butter with
6 T. raw honey
6 hpg. T raw cacao powder (I mix mine with carob powder).
2 T. lucuma powder (optional)
10-15 drops peppermint extract

Shave and melt the cacao butter with the honey. Stir in the cacao and lucuma. Stir by hand for several minutes. The more you stir chocolate, the better! Turn off the heat and add the peppermint. Drop by teaspoonfuls onto waxed paper. Freeze for 10 minutes. Out of this world!
