Mango Chocolate Pie

I went to Sylvia’s Vegetarian Restaurant, to have a green smoothie with Lorena, who cooks the breakfasts there now. Anyway, she makes me amazing green smoothies. They’re only $1.50 for this big glass! And she makes my favorite chocolate smoothie for $2.50 a HUGE glass. And you don’t have to wash your dishes! Then she served a Mango Chocolate Pie. Here’s my version:

Recipe of the Day – Mango Chocolate Pie

Ingredients:

Crust:

3 c. almonds, walnuts or other nuts
6-9 soaked dates, with the soak water
1 T. coconut crystals or other dry sweetener
1 tsp. almond extract
dash sea salt

The Filling:

4 c. sliced mango

1/2 c. coconut crystals or other dry sweetener of choice

1 T. coconut oil

1 T. chia seeds soaked in 3 T. water

juice of 1 lemon

1 tsp. cinnamon

 

Chocolate:

1 avocado

1/2 c. almond milk

1/4 c. cacao powder

dash vanilla powder or extract

pinch salt

options: shredded coconut

Directions:

Combine the crust ingredients in a food processor and process until mixture forms a ball. Press into a pie plate.

Mix the ingredients for the filling together in a blender, then pour into your crust.  Combine the chocolate ingredients in the same blender and top the pie. You can also put the chocolate first, then the mango, it’s up to you You can put some shredded coconut on top for decoration!

Tip of the Day – The mangoes here are so gorgeous. You gotta get them just under ripe – a little bit firm for the perfect taste.
