They finished my terrace! And I get phone and internet up there, wohoo! Tiko and Cuko have no problems going up and laying around as well. Oh my gosh. I may put my mats up there and sleep there tonight!
Sugar-free, dairy-free, gluten-free cookies! But from dried fruit: dates, raisins and cherries.
- 1/4 c. coconut flour
- 1/2 c. nut or seed butter (like almond or peanut)
- 6 pitted dates (soaked 10 minutes – save the date water)
- 3/4 c. coconut
- 1/2 c. apple sauce
- 1 Tab. chia seeds soaked in 3 Tab. water (or 2 eggs)
- 1 1/2 tsp. cinnamon
- dash vanilla powder or 1 tsp. vanilla extract
- 1/4 tsp . salt
- 1/2 tsp. baking soda
- 2 T. dried cherries
- 2 T. chopped walnuts
- 3 T. raisins
Combine the flour, oil and dates in your food processor, using the date water if needed. Add the coconut, applesauce, seeds or eggs, cinnamon, vanilla and salt and pulse until mixture forms a wet ball. Stir in the fruit and nuts by hand. Using a spoon or ice cream scoop, place on dehydrator sheets at 105 degrees for 4 hours or more, until desired consistency. Or you can bake for 12-15 minutes a350 degrees!
