Chia Coco Cookies

The new guy came and put in my windows! What! They’re in and they’re beautiful, and so is the back door, woohoo! And it’s too hot. But it was a windy day AND the fire was happening at the Moliendo, so good day to close the windows. I only hit the kitchen window once, so far, with the compost! A  banana peel.

Recipe of the Day – Coco Cookies

1 c. coconut meal

1 c. oats

1 c. potato flour

1 c. shredded coconut

1/2 tsp. vanilla powder (1/2 tsp. vanilla extract)

1 c. coconut oil

1 Tab. cinnamon

1 Tab. chia seeds soaked in 3 Tab. water

1 large banana

1 tsp. vegetable glycerin

options: 1/2 c. cacao powder, walnuts, cacao nibs or chocolate pieces, berries, pumpkin seeds

Directions: Soak the chia seeds, then combine the dry ingredients and mix together. Mash the banana, then add the glycerin and oil and stir together. Mix all very well and dropby spoonfuls onto your dehydrator or cookie sheets. Dehydrate at 105 degrees for 4 hours or more, or bake 10-12 minutes at 350 degrees F.
