Vegan Nut/Seed Cheese

There was a lizard that was on the front porch today. The animals have no experience of being afraid of people here, it seems. So they’re just, not!

Recipe of the Day – Vegan Nut or Seed Cheese

Ingredients:

1 c. white sesame seeds

1/4 tsp. salt

1 clove garlic

juice of 1 lemon or 1/4 tsp. acidopholus

pinch of stevia powder

a smidgen of orange juice

raw apple cider vinegar

fresh garden herbs and edible flowers ( to top it off)

Directions: Soak sesame seeds for at least 40 minutes, then drain. Grind into a powder with your food processor or Blender. Blend with  salt, then add 1/4 tsp. acidophilus or lemon juice and pulse for a few seconds. Add the stevia, oj and vinegar and pulse again.

Put this batter into clean jars with about 1/3 empty at the top to allow for expansion. Screw on the lid but do not tighten so that fermentation gases can be released. or you can cover with a paper towel and let sit out for 8 hours. 80-90 degrees F is best.

There will be tiny bubbles, and a pleasant yeasty smell.and a tangy taste when ready, 4-8 hours.

Once the cheese is done, tighten the lids and refrigerate.

Word of the Day – lagarto – lizard

Tip of the Day –Don’t overfill these jars as they expand with the heat. Makes for an excellent raw cracker condiment!
