Stuffed Banana Peppers

My lovely young, 21-year old Airbnb guest is slashing old banana leaves off the tree for me! She asked if she could tear them, but they will only come off with a machete, so she did it, and took all the leaves to the compost. That’s something I’ve wanted to do for 6 months!


Recipe of the Day – Stuffed Banana Peppers

Creamy Pepper Poppers –

4 peppers: banana, bell, cayenne, serrano or toblano.
1 c. pine nuts or cashews
2 yellow bell peppers, seeded and chopped
juice of 1 lemon
1 tsp. sea salt
1 T. paprika
optional – not raw – 1 T. nutritional yeast
Other options – 1 c. basil, 1/2 tsp. chipotle or cayenne, 1 garlic clove

Directions: Remove seeds from 4 peppers: banana, bell, cayenne, serrano or toblano.

In a blender or food processor, process the ingredients, except for the peppers. Divide into 4 sections and stuff the peppers.


Tip of the Day – The Ecuadorians aren’t “big” on using their peppers, but it’s fun to find them and use is so many ways. Throw the seeds in your garden, as my friend did, and find the plants growing so fast!
