Mango Cucumber Rice Salad

“Hey, Dorothy, Come sweep over here!” Someone yelled out to me, as I passed the Juice Factory. I holding a huge bag of pillows and stuff, wearing a backpack and carrying a broom in the other hand. Three men and a woman laughed. “Hey,  I am not a maid, I’m a bruja! (a witch).”

Recipe of the Day:  Mango Cucumber Rice Salad

Ingredients:

1 1/2 c. cooked brown rice

1 c. chopped mango

1 cucumber, diced
1/2 c. chopped fresh cilantro
1 red pepper, thinly slices
2 green onions, chopped
1 Tab. finely grated  lime zest
juice of 1 lime
2 T. coconut oil
1 tsp. coconut sugar
Freshly ground pepper
1/3 cup chopped salted roasted peanutsDirectionsBring a large saucepan of salted water to a boil over high heat. Add the rice and simmer 45 minutes.
Whisk the lime juice and zest, oil, sugar, 1 teaspoon salt, and pepper to taste in a large bowl. Add the rest of the ingredients and stir to combine. Season with salt or herb blend of choice. Good warm, but chill!

Word of the Day- bruja – witch

Tip of the Day –  OH, my gosh, the mangoes are So good here. I thought I came to this country for the papayas, but it turned out to be the mangoes! Put them in everything! A friend of mine serves them with tamales, and it’s delicious!
