Gee, these coconut shells, from the coconut recipes I use, sure make good dog food scoops, dishes and pet water!.What do you use yours for? Scooping hot soup?
- 2 c. broccoli, broken
- 3 c. vegetable broth
- 3 stalks green onion, minced
- 1 garlic clove
- 1 c. cooked brown rice
- 1 Tab. coconut oil
- 1 1/4 c. almond or coconut milk
- 1 Tab. thyme
- 1/4 c. nutritional yeast
- Red or black pepper for garnish
Chop the broccoli into chunk-size pieces. Saute the onion in garlic in the vegetable broth. Cook until all vegetables are tender. Add the broth and the rice. Transfer 1/2 the soup to a blender and blend with coconut oil until creamy. Pour back into the pot and add the spices and herbs, yeast included. Simmer until warm. Squeeze fresh lemon on top, if desired, then garnish with pepper sprinkles and more nutritional yeast. Serve immediately.

Tip of the Day – Eat lots of soup in Ecuador. It’s a daily staple and such a comfort. And I have never been to an Ecuadorian restaurant where the soup wasn’t a pride of the kitchen!
