This tahini sauce is so good, I can’t get enough of it. Mazzie, owner of The Falafel Org. in Vilca, said he makes it with vinegar and mustard! I made a reasonable facsimile and it came out pretty good! Soon he will give me his recipe, when I can get my butt over there. I’m afraid to go in there because I automatically want his addictive pita bread with his famous tahini sauce!
1 c. sesame seeds
water to cover
3 cloves garlic
1 tsp. salt
1 tsp. apple cider vinegar
1 tsp. fresh mustard
juice of 1 lemon
dash of stevia
Directions: Soak the seeds in water to cover, for at least 40 minutes. Drain, and blend the seeds with enough water to make a creamy paste. Add the other ingredients and blend to make a super creamy sauce. Taste and add more salt or stevia to your taste!
