Sweet Caramel-Date Apples

Not only is my new bathtub in, but there’s water coming out! And the tub drains down to the other end. weird! But I like it. The shower head is at the opposite end of the drain. And the grey tiles are so pretty, oh my gosh. I wish it would never get dirty, it’s so shiny and pretty. Maybe if I never use it. Too late! ha ha.


Recipe of the Day – Caramel Apples

Dates and lemon, combined with nuts, makes an amazing, good-for-you, caramel apple taste.  Dip sweet apple chunks in dates and roll them in nuts!
6 organic apples, cut into bite-size pieces
2 c. dates soaked in 1 cup water
2 T. raw tahini
Pinch vanilla powder or 1 tsp. anilla extract
1 tiny pinch Himalayan crystal salt
– juice of 1/2 lemon
2 c. walnuts, almonds, pecans, hazelnuts or other nut of your choice, optional – cacao nibs!

Directions: Pulse the nuts in a food processor and transfer to a bowl..
In a food processor, blend until smooth, the soaked dates, tahini, vanilla and salt. Put the date paste in a bowl. Dip each apple slice. Swirl in nuts. Chill in the refrigerator. Enjoy!
